The basic ingredients for this dessert are eggs separated, sugar, oranges, cinnamon, ground almonds, blanched almonds finely chopped, freshly squeezed orange juice, and sugar. The result is a light and tender crumb, softly sweet. While the almond is often eaten raw or toasted, this nut is also a component of various dishes with almond. Almonds are available in many forms, such as whole, flaked, slivered almond, and as almond butter, almond milk and almond oil. The sweet almond contains about 26% carbohydrates, and may be made into flour for cakes and cookies for low-carbohydrate diets. Almond flour is gluten-free. Almond dishes are a good source of vitamin E and monounsaturated fat (for lowering LDL cholesterol).
